The paring knife is an exceptionally useful tool in the cook’s hand. Best suited for small, delicate tasks like peeling or stemming fruits and vegetables, the paring knife is often held deeper into the hand (toward the pinky) so that the cutting action can work in against the pad of the thumb. The damascus on this knife is finished to let the handle really shine; it’s a beautiful piece of curly maple with rays of hard grain running through it that show up bright and gold against the dyed curls. A very nice piece.
