The santoku is usually agreed to be a Japanese interpretation of a Western interpretation of Japanese cooking knives...which in turn were influenced by Western cooking knives. It's confusing. The santoku is a highly versatile cooking knife, well suited for the full range of cutting tasks in the kitchen. My santoku shape incorporates enough belly for comfortable rocking, and a flat enough edge for chopping.
The balance of the knife is extraordinary; most people's first reaction upon picking up a Zack Jonas kitchen knife is a literal gasp and "it's so light!"
