Blades: 8″ Texas wind damascus and 1084 high carbon steel
Handles: 5″ maple burl, nickel silver, micarta
This is a pair of my signature 8″ chef’s knives. My culinary knives, like all the rest really, are designed to work and work hard. The handles are shaped to sit comfortably in the hand in a number of different positions, including the more forward “pinch” grip favored by the professionals. Maple burl is of course an awesome handle material, and no two pieces are ever alike.
A knife like the damascus one (top) would be $850. The 1084 one would be $600
