Blade: 5″ (Texas wind and ladder high carbon damascus, 1084 steel)
Handle: 5″ (maple burl, cocobolo, rainbow poplar, African blackwood)
I designed this knife to slot in between my 7″ chef’s knife and 3.5″ paring knife. This style of knife is great for the smaller things you would use a chef’s knife for, and the larger things that would make you reach for your paring knife. It is broad enough to chop comfortably, and nimble enough for peeling and point work.
Knives like these would price at $400-$500.
