The paring knife is an exceptionally useful tool in the cook’s hand. Best suited for small, delicate tasks like peeling or stemming fruits and vegetables, the paring knife is often held deeper into the hand (toward the pinky) so that the cutting action can work in against the pad of the thumb.
The blade of this knife is hand forged, 200-layer ladder-pattern damascus steel, mated up to a stabilized and black-dyed curly maple handle. The overall effect is subdued but elegant.
