The paring knife is an exceptionally useful tool in the cook’s hand. Best suited for small, delicate tasks like peeling or stemming fruits and vegetables, the paring knife is often held deeper into the hand (toward the pinky) so that the cutting action can work in against the pad of the thumb. The subtle damascus goes beautifully with the brown curly maple. A wood is called “curly” when its grain has developed in a sharply rippling formation. The striking bands that typify curly woods are the result of the light refracting off of the shifting direction of the grain.
